It’s a salad. It’s a sandwich. It’s Kathy’s Seafood Melt, which is a little of both. The melt consists of crab salad (made with the kind of imitation crab that includes some crab meat) heaped on an English muffin half and topped with shredded Cheddar. It was created by Kathy Tusquellas, whose husband, Bob, runs Tusquellas Seafoods in the Farmers Market. You can either heat the melts in the microwave or broil them until the cheese melts.
