Water as liquid gold

I absolutely loved “Water, Water Everywhere but Not a Drop Free” (Oct. 1). I am a CPA with clients in the restaurant industry and I have long known about the gargantuan markup on water. Many years ago, I asked a client why he stayed open at lunch, and he said because of the markup he made on bottled water!

While dining at Campanile, my host ordered his favorite English bottled water (as if anything English is really good) and I got a good giggle when I saw the foil-stamped label’s motto: “Digustubus non est disputatum” -- which I was taught meant, “There’s no accounting for taste.”

I never order bottled water. When asked what my choice of bottled water will be, I smile and say that I will have whatever the chef uses in the kitchen for cooking, and what might that be?
