At Moo’s Craft Barbecue, Andrew and Michelle Muñoz serve Texas-style barbecue that incorporates the spirit and many of the flavors of Los Angeles. Beef plate ribs, a Saturday special at restaurant, are prepared on Moo’s customized smoker, a set-up out of reach for most home cooks. But with a few adjustments — and additional spices, including smoked paprika, guajillo chiles, cumin and oregano — they show us how we can get earthy, smoky ribs with a bark-like crust using an ordinary kitchen oven. The meat can be sliced and presented with traditional barbecue sides, or it can be pulled apart and turned into tacos with fire-roasted tomatillo, serrano and chile de árbol salsa.
